The onions look a little overdone, or is that the result of the seasoning?

They weren't overdone (in my opinion anyway). They lose color and become bit translucent when you warm/fry them.

They're red onions, which might explain why they look overdone. Having said that, I love long cooked onion.

I finally figured out why my smartphone wouldn't log in to Posty. I had gotten a trivial username error. Now I can access posty while at work, so it's conceivable my post count may increase.

Beef stew

Get half a kilo to a kilo of beef, cubed for stew. Chuck and round are good cuts for this - they have enough fatty tissue in them to keep the stew moist.

Roll the beef in corn starch. (Wheat flour can also work.) Then roll them in vegetable oil and, if you like, soy sauce. Put oil in the pot and fry with sliced ginger and garlic to season the oil. Add the meat, and fry on high heat, making sure as much of the cube surfaces are browned. Add black pepper, plus salt if you didn't already use soy sauce.

Once they're all nicely browned, turn the heat down, add wine (red wine, sherry, and marsala wine all work well). Other ingredients for the sauce could include: Chinese five spices, star anise, cardamom, and beef stock juice. Turn the heat down to a hearty simmer.

Chop vegetables. Turnips, broccoli, onions, carrots, tomatoes, mushrooms, celery, leeks, even rhubarb all go well. Add them to the pot.

Add water to just barely cover all the ingredients. (Alternative: to make a thicker gravy sauce, mix corn starch with water and soy sauce or wine, then add it.) Turn the heat to just a bare simmer, add 30 cloves of unchopped garlic, and cover. Simmer for a few hours.

The garlic will soon lose its astringent, sharp flavor, and prolonged cooking at moderate temperatures will cause it to sweeten and turn nutty.
